At Bong Eats we document the food of Calcutta. We cook traditional Bengali recipes prepared in home kitchens, as well as some of the most beloved dishes found in the myriad streets, cabins, and restaurants in the city.
While we share some of the classic recipes with you (because who doesn’t love shorshe ilish, chingri malai curry, and mishti doi?), we also bring you a whole host of dishes that are considered too humble for guests. They are eaten in the privacy of our own families, and provide as much comfort as they do nutrition.
With this project, Bong Eats, we hope to demystify such preparations and make them accessible to just about anyone interested in cooking and eating.

Shutki, Katwa Data Kumro diye—Bengali Bombay Duck recipe with vegetables
Shutki or dried fish is a delicacy in Bengal like many other parts of South Asia. This particular family recipe is a pachmishali torkari-cooked with a "medely of vegetables"-amped up a notch with shutki. We are using dried loitta fish, also known as Bombil or Bombay duck in other parts of India, but you can use any dried fish you like.
The main vegetables that my grandmother used in this recipe are katwa data (which is a type of amaranth that is grown for its fleshy stems), and sweet pumpkin. It is also a bit unusual for a pachmishali in our family to use onion and garlic, but this one does because they pair well with the strong flavours of dried fish.
If you are cooking this is late in summer or during the monsoons, definitely include jackfruit seeds (kathal'er beej) which are abundant during this time as ripe jackfruits are in season.

এটা একেক বাড়ির রান্নার ধরণ। পাঁচমিশালীতে অনেক রকম ফোড়ন দেওয়া যেতে পারে। আমাদের বাড়িতে কালো জিরে, পাঁচ ফোড়ন, তিন ফোড়ন, রাঁধুনি ফোড়ন-এক একটা পাঁচ মিশালিতে এক এক রকমের ফোড়ন দেওয়া হয়।

To the admin(s): Finally Shutki!.... Yes I requested and suggested you many times to show the shutki recipe. Especially, the most pricey and delicious one, the Noona Ilish aer Bora.(Wrapped in pumkin leaf, not in gourd leaf). Swaad aisa, ke murda zinda hoke khara ho jaye. But you at least introduced shutki to your subscribers and viewers which is infamous(for ghati), famous/an identity(for bangal). The best part of this video, is, you used the proper name for this shutki. I.e. the loittaa not lottey(as per ghati/baati). ;-) I am hoping you will show the Noona Ilish aer Bora recipe soon. what if we donot have access to dry cured bombay duck, could we do something similar with fresh bombay duck?
We have a fresh loitta recipe on the channel too. If you want to make this particular recipe with fresh loitta, I would probably first cook the loitta separately to reduce its moisture before adding it to the vegetables.

Sojne ta bhalo lagena sutkir sathe. Tobe jodi we are concerned about individual taste buds tahole bhalo lagtei pare karo karo. Kintu generally sutkir sathe afore mentioned "Data" tai bhalo hoy khete.

মজার জিনিস হলো, Katwa তে কিন্তু এই ডাটাকে আলম্পুরি ডাটা বলেই আমরা ডেকে থাকি। কারণ আলমপুর কাটোয়ার কাছাকাছি একটা গ্রাম কিন্তু বাইরের লোকেরা মানে কাটোয়ার বাইরে যারা থাকে তাদের কাছে নাম টা অপরিচিত তাই এই ডাটাকে কাটোয়া ডাটা বলে।

Bombay Duck is the fish. Shutki is the process of drying the fish. Any fish can be shutki'ed.
I have never cooked shutki mach , I see it often here but am scared of the smell though I love lotte mach 😅
মাছ টাকে আগে কিছুক্ষণের জন্য ভাপিয়ে নেবেন। রান্নার সময় ওতোটা গন্ধ লাগবেনা।। প্রথম প্রথম নাকে হাত দিতেই হবে। কিন্তু একবার অভ্যেস হয়ে গেলে এর প্রতি ভালোবাসা হয়ে যাবে! সুস্বাদু তো বটেই, শরীরের জন্য ভালো। বিশেষ করে বর্ষাকালে খেলে সর্দি জ্বর থেকে রক্ষা করবে। মুখে রুচি ফিরবে। 🤗☺
